Kickin’ Sweet Cornbread Breakfast Casserole

Ingredients:
- 1 box
- Kickin’ Sweet Cornbread Mix
- 1/3 cup milk (or as package calls for)
- 2 large eggs (for cornbread)
- 1/2 cup sour cream (optional for moistness)
- 1/2 lb breakfast sausage (spicy or mild)
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (any color)
- 6 large eggs (for egg layer)
- 1/4 cup milk or cream (for egg mixture)
- 1 cup shredded cheddar or pepper jack cheese
- Salt & pepper to taste
- Optional: sliced jalapeños or hot sauce for topping
Instructions:
- Preheat oven
- to 375°F (190°C). Grease a 9x9” or 9x13” baking dish depending on thickness preference.
- Cook sausage: In a skillet over medium heat, cook the sausage until browned. Add onion and bell pepper; sauté until soft (about 3–5 mins). Drain any excess grease. Set aside.
- Prepare cornbread batter: In a mixing bowl, combine Kickin’ Sweet Cornbread Mix with 2 eggs, 1/3 cup milk, and sour cream (if using). Stir until just combined.
- Pour cornbread mixture into the greased baking dish and bake partially for 10–12 minutes—just until it’s starting to set (not fully baked).
- Whisk eggs: In a separate bowl, whisk the 6 eggs with 1/4 cup milk or cream. Season lightly with salt and pepper.
- Layer it up:
- Evenly spread cooked sausage/onion/pepper mixture over the partially baked cornbread.
- Pour egg mixture evenly over the top.
- Sprinkle shredded cheese all over.
- Bake again for 20–25 minutes, until the eggs are set and the top is golden.
- Cool slightly, slice, and serve! Great with hot sauce, avocado, or a drizzle of maple syrup for contrast.
